 Substitute For Baking Powder

Baking powder is a key ingredient in many cake, cookie and bread recipes; but that doesn’t mean you have to pay someone else to make it. Here’s how to make your own baking powder:

Prep Time: 2 minutes

Total Time: 2 minutes

Ingredients:

1 teaspoon baking soda

2 teaspoons cream of tartar

1 teaspoon corn starch (optional)

Preparation:

Mix the baking soda and cream of tartar together until well combined. Use immediately.

Yield: One tablespoon of baking powder.

To store baking powder: Add a teaspoon of corn starch to the mixture, and stir. This will absorb any moisture from the air, and prevent the baking powder from reacting before you need it. Store in an air-tight container.

Did You Know? Most commerically-produced baking powder contains aluminum–sodium aluminum sulfate to be exact. Make your own baking powder, and keep your baked goods aluminum-free.

Anxious mice & Probiotics- A secret weapon in your kitchen?

Have you ever wondered, “why is yogurt supposed to be so good for us”?    I am lucky to really like yogurt, sauerkraut and all the other delicious probiotic foods, and when you make your own, these taste better and are more healthy for you than store-bought.  It can be an acquired taste for some people, but is well worth developing.  The whole “good bacteria vs. bad bacteria” issue can be a very complex, scientific area if you want to delve deeply, but on a very basic level, if you keep enough of the good bacteria in your gut (or on your skin) it will prevent an overgrowth of bad bacteria and even bad yeasts.  I have a very unscientific, very unprofessional opinion that by taking or eating probiotics on a daily basis, my family and I have avoided the dreaded stomach bug for many years now.  Maybe it’s a coincidence, but maybe not.  I don’t know about you but I hate to vomit AND I hate cleaning it up too.

On my journey as a mother, I am drawn towards things that could help keep my children and my family healthy, particularly if they are natural. Discovering that there most certainly is a brain/gut link, in addition to all the digestive benefits, has had huge implications and I originally found it while researching vaccination options and how peanut and food allergies, autism and mercury might be linked.  Inflammation in the gut having effect on brain function?  Hmmm.

Using probiotics to maintain optimal health has been an issue that I keep stumbling upon, whether via doctors that recommend using them, articles I read, recipes and books from the Weston Price Foundation and authors like Sally Fallon (Nourishing Traditions-a FANTASTIC BOOK), the GAPS diet, and other friends’ experiences.  When I see a trend- information that keeps surfacing over and over- it gets my attention.  Many of us know about using probiotics during antibiotic therapy, but it is articles like the one I found on NPR the other day (see below) that made me seriously think about why modern food production and the lack of good bacteria in our foods could be hurting our bodies.  If you look at the way meals were prepared and how they were preserved before the advent of modern mass food processing, people used to use a lot of good bacteria to keep their food edible. It was natural to eat sauerkraut, kefir, yogurt and even sour cream (each of them the fermented kind they made at home) at every meal or at least every day.  For a very interesting read about probiotics and other possible benefits, join me in being fascinated, and read on:

Latest Duval County Extension Newsletter

I am a HUGE fan of the Duval County Extension office. You can learn a great many life-skills by attending their classes.  They have beekeeping, gardening, canning, financial planning, water barrel classes and this month even a good checklist for Storm preparedness.  Please check out their latest newsletter and maybe even subscribe so that you can get this great information each time they publish it!

Don’t forget to thank the master gardeners who so graciously volunteer to teach canning classes. They now do this on their own time with no pay, due to the budget cuts in the City of Jacksonville under former Mayor John Peyton. I am all for keeping the budget focused on fire & police and essential services but I hope our city will find a way to encourage sustainable living and life-skills education to keep these wonderful staff members and volunteers around to help us, our children and our country.
